What to expect

Get a complete introduction to the local culinary culture of Bolzano thanks to this unique walking food tour! Get the chance to taste the most authentic and genuine products of the region and the impeccably prepared traditional dishes. Your local foodie guide will not only suggest you the best restaurants where locals like to consume their meals with family and friends, but also give you plenty of information about the region's culinary art and history.

Here's a list of possible tastings:

  • Speck: uncooked, salted, and smoked pork that has been aged anywhere from six months to two years. It is incredibly flavored with a variety of spices that make it so delicious. Often served with the traditional bread types and pickled cucumber
  • Bauernschinken: cooked ham flavored with the same spices used in the speck process, a unique and tasty cold cut
  • Canederli: Knödel are dumplings made of stale bread moistened with milk and bound with eggs and a tiny amount of flour. The mixture is often enriched with cheese and speck. You will try both the classic and seasonal versions
  • Spätzle: small dumplings prepared with wheat flour, eggs, water and boiled spinach, topped with cream and speck.
  • Laugenbrot or Brezen: the laugenbrot is a typical south Tyrolean bread made by immersing bread rolls in a lye solution before baking; sometimes it is stuffed with cheese. The Brezen is a particular ring-shaped bread with a golden and shiny crust covered with grains of salt.
  • Bier tasting: from delicate light beer to spicy strong beer, the South Tyrolean beer world boasts a diverse range. You will taste different types in an old brewery.
  • Strudel: apfelstrudel is the area's most famous dessert. It is a pastry made from a thin sheet of dough rolled up with filling and baked. Thanks to the incredible variety of apples this dessert is a true delicacy
  • Caffè espresso: Italian rituals expect you to end your meal with an espresso coffee
